How to make pumpkin soup

Ah, fall! Crisp weather, falling leaves, snuggly sweaters—and, most importantly, cozy food. What could be more autumnal than a nice warm bowl of pumpkin soup? Lucky for you, we've enlisted Adolescent creator Stella Scriberras to break down the art of making the perfect pumpkin potage. Check out the video, or see below for the recipe!

Ingredients:

  • 1/4 Kabocha Squash (Pumpkin)
  • 1/2 yellow onion
  • 1 boullion cube
  • 2 cups of water

Recipe:

  1. Skin and cube the pumpkin
  2. Dice the onion
  3. Add bullion cube to 2 cups of boiling water and stir until combined
  4. Place pan in medium heat and add onion, pumpkin and bullion broth; stir and let cook for about 20 minutes, or until tender
  5. Take off heat and add to a blender or food processor; blend until smooth
  6. Serve and garnish with your favorite toppings: herbs, crème fraîche—the choice is yours
  7. Enjoy!
